You don't have to hang around me long to know that I love India and the other night I was in the mood for something with a little Indian flare and decided to try my hand at whipping up some Indian scrambled eggs, which we were served for dinner one night on my most recent journey there. I had all the ingredients on hand and chances are you do too! Here's a brief tutorial and I promise you, you'll love the outcome!

Saute some onions in a bit of olive oil... |

Add chili power, salt and eggs to your browned onions... |

Now if you had been in India, your scrambled eggs would have been served minus the fork but with a bit of naan (type of flatbread) for "scooping." You would've probably been served some type of vegetable curry as an additional side dish but I just went with the eggs.
Made me wish I was there again...
